            Arya News - The magic of stinky tofu in Changsha, China`s Hunan province has captivated locals and tourists alike for more than 200 years.

            BEIJING/CHANGSHA – The smell can be a bit overpowering, even off-putting. But one bite and you are hooked. That is the magic of stinky tofu in Changsha, Hunan province — a snack that has captivated locals and tourists alike for more than 200 years.
            “I grew up on this,” said Shi Xukui, a 30-year-old office worker in Changsha. “It’s not fancy. You stand by the cart, bite into it while it’s piping hot, and the juice runs down your chin — that’s the real taste of the city.”
            Stinky tofu in Changsha is not just a snack — it’s a dare, a comfort, a collective childhood memory and a daily delight.
            It assaults your nose way before it even reaches your lips: The aroma — pungent, earthy and deeply fermented — hits you from half a block away.
            However, the smell is only the opening act. Once the black cubes hit the sizzling oil at 150 C, they transform into a smoky, savory seduction that draws crowds like a magnet.
            Bite through the crackling shell, and a hot, spicy, garlic-laced broth explodes in your mouth — juicy, messy and utterly addictive.
            But here’s the beauty of Changsha: No two batches of the delicacy taste exactly the same. At Fire God Palace (Huo Gong Dian) — a historic temple now turned into a time-honored dining destination known for traditional Hunan snacks — the brine is made from a secret family recipe and aged for two years. At Hey Hey Black, which has outlets everywhere, the seasoning packs a stronger punch with a chili kick that wakes up your palate.
            Then there are the nameless corner stalls. Vendors set up their carts at dusk, offering a comforting escape for workers and students weary after a whole day’s labor.
            At about 2 yuan (30 US cents) a pop, it’s an affordable thrill that appeals to all ages and income groups.
            The craft of making Fire God Palace stinky tofu has been recognized as a national intangible cultural heritage, said Zhou Houmu, a fourth-generation inheritor at Fire God Palace, who has been making it for over 17 years.
            Zhou said the process involves five steps: selecting the brine ingredients, making the brine, preparing the tofu curd, soaking the curd in the brine and deep-frying it.
            The brine is the heart of it all — a blend of more than 20 ingredients, including mushrooms, winter bamboo shoots, black fermented soybeans and perilla leaves. It ferments naturally for 18 months to two years, he said.
            “It’s the brine that makes all the difference,” Zhou said. “That’s why our stinky tofu smells funky but tastes delicious.”
            The proof lies in the eating. Liu Fei, 60, a visitor from Hebei province who grew up in Changsha, returned to the city recently with his family to revisit his childhood memories.
            “I’ve had stinky tofu in other places, but none of them compare to this,” he said. “This is the most authentic you can get.”
            Damon Shelby, a 27-year-old from the United States who is visiting Changsha, was equally smitten. “My first impression was that it was really moist, with lots of flavor all at once,” he said. “I liked how juicy it was. It’s interesting that it’s black — we don’t have anything like this in America. I feel it’s really good to eat while you’re walking.”
            Long Shixing, head of operations at Fire God Palace, said the outlet sells about 4 million pieces of stinky tofu each year and has drawn over 7.22 million visitors so far this year. The rush typically peaks between 4 pm and 9 pm, when Changsha’s vibrant nightlife comes alive, he said.
            Stinky tofu has become a signature of Changsha’s food culture, said Zhou, the inheritor. “When you go out for a late-night snack in Changsha, you have to order a portion. It’s like you haven’t really been to Changsha if you haven’t tried it.”
